Ginger jam?

Planted some ginger this summer and its growing rather well and as my mums favorite jam is rhubarb and ginger I thought I might try to make her some.

Anybody have a recipe for it?

I've not done this as I usually do Marrow and Ginger but I know others that have!

Rhubarb and Ginger Jam
3 lb rhubard prepared weight
3 lb sugar
juice of 3 lemons
1 oz root ginger

Wash and cut rhubarb up into small pieces. Layer with sugar and lemon juice in glass bowl. Leave for 8hrs.
Put contents of bowl into pan with bruised ginger tied in muslin bag. Bring to boil and boil rapidly to setting point.

That sounds similar to the recipe I use but I also add some chopped crystallised ginger into the jam towards the end of the cooking.

and if you have enough ginger you can make your own crystallised ginger

Have decided to wait till mum gets here as she has crystallized ginger she can bring and we shall make it a HUGE experiment and use palm fruit puree instead of rhubarb.

So shall be inventing as we go Laughing

She LOVES crystallized ginger so will be trying that as well but not this week!

yes, my recipe also uses crystallised ginger.

Wilkin and sons makes a ginger preserve, sold in tiny jars. to be eaten with cheeses, I guess?

I usually put it in about 10minutes or so before I think it should be ready.

It didnt set Mad Mad Mad

AND I followed the directions on the box of pectin too Crying or Very sad

So now have SLOPPY goop in my nicely sealed jars facepalm

Might take the on jar that didnt set and boil it again, I did think that the one min at the rolling boil called for by the directions was a bit scanty, time wise.

If it were for me it wouldnt matter but am TRYING to make Christmas prezzies!

Reboiled two jars with a cup more sugar added for 5 min.

They set Shocked

Jars didnt seal though facepalm

I have three other jars to re-do so will pay special attention to getting the lids on right!

As I cant really taste ginger its hard to tell if its good or not but I think it is. Mum says its probably spicy enough to take the top of her head off if even I can tell its a bit gingery Laughing

Hmm, sounds good, my in laws lurve the jams etc. wot I make, do you have a final recipe for that GB, (& any tips to just add a little more cheekyness (chillies etc Wink )...

PS... DL I haven't forgotten I promissed you the Blackberry, Rosemary & Mint Jelly recipe, just haven't finished inventing it quite yet, its still work in progress but nearly there...
