Buttermilk pancakes from scratch
Buttermilk Pancakes
The key to fluffy pancakes is not to overmix the batter; it should not be beaten smooth.
2 cups all-purpose flour
2 teasoons baking powder
one teaspoon baking soda
1/2 teaspoon salt
3 tablespoons sugar
2 large eggs, lightly beaten
3 cups buttermilk
4 tablespoons melted butter.
Whisk together the dry ingredients. Add eggs, buttermilk and the butter. Stir and pour into pancakes in heated skillet (with hot oil, crisco, butter or bacon fat in the skillet).

Oh perfect - thank you! I knew I ended up on this forum for a reason LOL! My daughter made me promise before she went to bed last night that she could have pancakes for breakfast. I'd forgotten all about it, but now made the batter and it's resting.
