We always have loads left over so here are some ideas I have googled which sound good & which I will be giving a try.
Any ideas???

Roast Turkey Chunky Soup

Ingredients
1 picked over turkey carcass
300g leftover stuffing
2 celery stalks, chopped
2 carrots, peeled and sliced
1 onion, peeled and diced
2 bay leaves
1 tablespoon poultry seasoning
1 teaspoon ground sage
1L water
1.5L chicken stock
salt and freshly ground black pepper, to taste
300g long-grain white rice
300g frozen garden peas



Preparation method
1. Place the turkey carcass in a large, deep pot, and add the stuffing, celery, carrots, onion, bay leaves, poultry seasoning, sage, water and chicken stock. Pour in additional water if needed to cover. Bring to the boil over medium-high heat; reduce heat to medium, and simmer for about 1 hour, skimming off any foam. Remove the carcass and any bones. Pick any meat off and return to the pot, discarding bones and skin.
2. Season to taste with salt and pepper. Stir in the rice and return to the boil over medium-high heat. Lower heat to medium, and simmer 15 minutes. Stir in the peas, and continue to simmer until rice is tender, about 10 minutes more. Adjust seasonings to taste.

Coronation Turkey with mixed vegetable rice

Ingredients

4 finely chopped spring onions
100g chopped ready-to-eat dried apricots
100ml mayonnaise
100ml plain low-fat yoghurt
1-3 tsp curry paste
300g diced cooked turkey
680g pack frozen rice with vegetables






Preparation method
1. Mix 4 finely chopped spring onions and 100g chopped ready-to-eat dried apricots with 100ml mayonnaise and 100ml plain low-fat yoghurt. Add 1-3 tsp curry paste (your favourite strength), to taste, and seasoning. Stir in 300g diced cooked turkey. Cook a 680g pack frozen rice with vegetables in a large frying pan according to the pack instructions. Add the chicken or turkey mayonnaise mixture to the rice mixture and stir over a very low heat for 2-3 minutes to heat through, stirring frequently. Serve immediately.
