Pickle Recipes

Mustard Pickle

As requested.

2lb mixed veg. I use courgettes, onions & cauli
!tbsp mustard powder
1/2 turmeric powder
1pt vinegar
2ozs sugar
1tbsp flour
1dsp ginger
1tbsp pickling spice
brine

Cut veg into neat pieces
Soak overnight in brine
Wash well & drain
Boil vinegar & spice for 10 mins
Mix dry ingredients with a little vinegar to a smooth paste
Pour over the strained vinegar & stir well
Return to pan & cook till just thickened
Put in the veg & cook for 5mins
Pour into jars & seal.

OH loves it & would eat a jar a week if I let him. Cut the veg really small & you have a sandwhich pickle.
