Twice this week I have followed the directions to the letter for jelly making. Ball's Blue Book of Canning. Its been around for DECADES so one shouldnt be able to fail at jelly following its directions.

I did Crying or Very sad

Now, dont get me wrong, I LIKE syrup but dang it to hell and gone, I WANT JELLY!!!

Beautyberry, wild grape and jelly palm. Each makes lovely syrup for fizzy drinks but they all make wonderful jelly when made by someone without the jelly whodo on them.

Pindo infact has enough natural pectin to set on its own so I thought "Well, with added liquid pectin, how can I fail with THIS batch?"

Silly me, I once had crab apple fail to set Rolling Eyes

Oooh, sorry it took so long to get back, did you get it sorted or have you frozen them to await different ideas... Will have a dig through my boooks...

Most of it is frozen adn the beauty berries are still waiting for the third picking. Its amazing how far a beautyberry can travel if the pitcher is tipped over by small children in the morning when they are reaching for the leftover pizza. Shocked Rolling Eyes
