Easy rabbit Kiev
Chunk two rabbits into bite sized pieces. (the left over bones make good stock)
Put chopped rabbit into an oven safe dish.
Whisk one or two eggs and pour over rabbit.
Cut a quarter of a block of butter into pieces and scatter them over rabbit.
Put LOTS and LOTS of garlic on to rabbit. Any kind will do, fresh, diced or powered or what ever you have on hand.
Scatter parsley over rabbit.
A bit of salt for same.
And then cover it all with a packet of soda crackers crushed into crumbs.
Cover with foil and bake at 300f for three or four hours until bunny is nice and tender, take off foil and crisp in a hot oven for just long enough to make crackers go crispy again.
Its really good
