I made this yesterday (With homegrown strawberries Cool )

Strawberry ice cream

1L box of strawberries
150ml whipping cream
125g caster sugar
250 ml miik
yolk of 3 eggs

Hull and wash the strawberries, blend to a puree. Pass through a (stainless steel) sieve - I use a conical patisserie sieve. Stir in half the sugar.

Make a creme Anglaise; beat the three egg yolks with the remaining sugar until they lighten in colour. Bring the milk to the boil, add a tablespoon or two to the egg mix and beat in, then add the rest. Return to the the pan over a gentle heat until thickened. Leave to cool.

Beat the cream until it is a similar thickness to the creme anglaise. I prefer to do this by hand with a balloon whisk to avoid the risk of going too far and making butter !

Stir the cooled creme anglaise into the cream. Fold in the strawberry puree. Churn. Enjoy !
