Right Fristly I would get hold of the things I need to do the deed.

In some cook books they say only put in 6 oz of the suger butter and flour with 3 eggs and they would not come out very big. we found that the cakes where very very small even when we used all the right stuff.

I then made one using 8oz of all the butter suger and flour with 4 eggs. It did'nt come out to bad.
Now my Wife puts in all the tens and they come out so light and fluffy.

10oz /284g .................Butter or soft margarine.

10oz /284g................... Caster ( superfine) suger.

5 eggs from our own chooks

10oz 284g....................Self-raising flour.

a few drops of vanilla essence.

1 - 2 tablespoon cold water if needed.


Start by greasing to 20 cm /8 inch round sandwich tins or layer cake tins and line the bases with greased wax or greaseproof paper.

Put the fat and suger in a bowl and cream together using a wooden spoon or a hand held electric mixer or hand mixer until the mixture is light and fluffy and pale in color.

IT's very Important to cream sufficiently at this stage or the mixture will not accept the rest of the ingredients as it should.

Beat in the eggs, one at a time until completely incorporated and follow each with a tablespoon of the flour.

Then Sift the rest of the flour into the mix. as well as the few drops of vanilla essence.
At this stage the mixture should be a soft dropping consistency.

Divide between the tins and level the tops spreading out from centre with a round blade knife.
But ONLY VERY lightly. Do not push out all the air that has been made.

Bake in a Moderately hot oven (190.C / 375.F / Gas mark 5 for about 20 /25 minutes or until well risen
At this point may I say that we use a Fan oven and ours are cooked in around 23 - 24 minutes it may take a bit longer in a normal oven.

Cool in the tin briefly until sides of the cakes begin to shrink slightly from the sides then turn out onto a wire rack. leave until cold.

I hope that you will like this one.
It took us a little time to get it right.

Looks lovely Nick, I must try it. I usually cook my Victoria sponges for 22 minutes in a fan oven - funny how precise you have to be with one. (I use a 6ox mixture) What temperature in the Fan oven do you use?

JG I would put it in at 190.C for less time as it's a fan oven lol!
