Re: Corned beef hash
When we were little my mum just used to use onions, potatoes and a tin of corned beef. A hooooge panful to feed my dad and 5 kids. No particular recipe, mainly spuds (cheap and filling) chopped up and boiled up with onions and then the corned beef chopped up and mixed in.
I guess you could bung in whatever other root veg you wanted, carrots, swede etc

Re: Corned beef hash
I make it from left over well-seasoned mashed potato, well-fried onion mixed in and crumbled corned beef; mix well, dot with butter and put in a hot oven until piping hot.
If you add cooked beetroot, you'll get Red Flannel Hash, even better, to my mind!
Best version is with home cured corned beef, but the tinned version is good too.

Boiled Potatoes, Onions, Corned Beef
All mashed together
I believe in frying the hash until the base is nice and crispy and brown, then flipping it over and doing the other side.
Serve with Tomato Ketchup.
If it's done as in JellyB's mum's method then it's more like Corned Beef Stovies, and needs gravy.

Re: Corned beef hash
I leave out the corned beef and use meat instead. And serve with worcestershire sauce or brown sauce. Tomato ketchup is for people who want to pretend to be American.
Re: Corned beef hash
Alternatively you could use fish instead and call it a Giant Fishcake.
Then you could use Thai Sweet Chilli Sauce.
Rhombo is obviously getting his Catsup and Ketchup mixedup !

Re: Corned beef hash
Home-made corned beef can be lovely. It's those vile lumps of oomska they sell in tins I won't be dealing with.
Re: Corned beef hash
I've brined brisket to make my own 'corned' beef.
It was Ok, but not the sort of thing I'd go out of my way to do again.
Tinned corned beef shouldn't be nice - but it Bl**dy Is !

I guess I don't want to pretend to be American... I'd never put ketchup on hash... on hash browns, perhaps... but never hash...
