I buy catering cheese from the shop, throw it into the food processor & chop really small, quicker than grating.
Mix in some butter or spread or mayo to make it spreadable
Season with whatever takes your fancy.
makes cheese go a loooooong way & quick & easy for sandwiches

My mother used to do this when we were little, and either added very finely chopped celery or finely chopped onion

I have used chutney, Worsestshire Sauce, mustard I would think paprika 0r Cayenne would be good.
Another thought, you can do similar with luncheon meat, corned beef or any leftover meat, makes it go further.
