Fermented fruit?
I have put the last two days palm fruit into the fridge as I simply haven't had time to sort it into the freezer. That way, once frozen, I can sort it into jam and syrup when I have more time
But seriously..............
I opened my fridge and it smells like a weird fruity beer in there and having bitten into three fermented fruits already I know its a fair number gone wonky.
What kind of jam does slightly fermented fruit make?
And before anyone chimes in with "Go on, make something stronger than jam out of the little fermented buggers!" that's not an option in a house of teetotalers
But seriously..............

Billy, its only slightly fermented, about one in ten fruits gone funny. Would that ratio ruin my jam batches?

Think I shall give it all a clean and render it into juice (slow cook it, in other words) and see how it tastes. If it tastes fermented I might try to turn it into vinegar.
Worst case, pig food. Best case, nice fruity vinegar.

Well, got it all reduced to juice and it does indeed taste odd. Anyone know how to make vinegar
