How to make vinegar???
First, imagine you DONT HAVE large glass containers and go from there

Large is relative. How much vinegar are you planning to make?
And from where are you starting? Do you know somebody already making good vinegar from whom you can obtain some starter. Or are you beginning from scratch and so having to come up with your "vinegar mother" from wild sources?
In the latter case I would highly suggest you begin by making a number of quite tiny batches at the same time, testing to see which has the best quality, and then using the mold culture form that one to make your first real batch.
Food grade plastic can be used instead of glass, especially if known to be an acid resistant sort (like an old gallon vinegar bottle?)
Anyway -- for making "cider vinegar" you first start by making some (hard) apple cider and then instead of sealing it off from air allow the vinegar mold to oxidize the ethanol tto acetic acid.
