My name is Aileen and I live in Dundee, on the east coast of Scotland with my dog Benny. I stumbled upon this site researching preserving all teh chillis I have grown on my windowsills this year.

Hello, welcome. What chillies have you grown, and what do you plan to do with them ? Perhaps we can compare notes ... I'm hoping to have a go at smoking some jalapenos to make chipotles, maybe this weekend Very Happy Very Happy

Hi

I have grown some Gusto Purple chillis this year. Very Happy Smoking would be great, but I lie in a top floor flat, so probably not wise. Shame really. I am just starting to research what to do with them, any ideas welcomed. I didn't really want to dry them, but I may need to to stick them in oil.

Let me know how the smoking goes, I love Chipotles.

Without wishing to divert too far into chilli preservation here, there are a few earlier threads on the topic; I have dried thin skinned types and the larger Mexican types like Ancho (which need extra warmth to dry without going mouldy) ; I freeze some like Habanero and Rocoto, and this thread:

Has some hints for pickling and chilli jam. You might want to judge for yourself how much of a risk (or not) is associated with preserving in oil.

Oooh, thank you. Both for the welcome and the link. I am a bit unsure about doing them in oil, especially having just lost a horse to grass sickness which is probably a form of botulism Sad I was wondering if drying them first negated the problem but the chilli jam sounds like quite a good plan.

That's funny - that's how I came to this site, too - though I grew them in my greenhouse, not on your windowsill!
