Whites - make meringues. If there are alot at once we have lemon meringue pie, otherwise make meringue nests and slow cook them and store them in airtight containers for pavlovas etc.

Yolks... ermm, can't recall ever having spare yolks. I would make spaghetti carbonara and plonk a yolk on each dish.
We got 34 eggs today. Of which 3 blue. Curiously we have only ever had one blue a day previously so either one chicken is doing overtime or 2 others are changing their production. Blue is the new brown, clearly.

Lemon Curd. Am making more tomorrow! Uses up more yolks than eggs.

Or even Lemon merangue pie with a topping of warmed Lemon curd....which would balance out the left over whites from the Curd making.

Am getting 11 eggs a day from the 12 hens and some days am getting 12. Good job passsing trade was brisk, today (I sold 3 doz today). Egg Mountain is diminished. Until tomorrow.

I would make a quiche or a spinach pie and just add whichever into it extra
