Apricot Pineapple Marmalade
Mmmm....today I will make another batch of Apricot Pineapple Marmalade....I used fresh pineapple last time....cooking it first so the enzymes wouldn't affect the pectin action of the apricots...the flavor is so fresh it is amazing.
Very easy recipe with apricots, pineapple, white sugar and honey.....I think I will use a little more honey this time....(trying to reduce the white sugar in recipes, but need to be careful with a few things....raw turbinado or evaporated cane juice are delicious in some things however they leave a strong molasses flavor in some recipes....
What are you guys using to sweeten recipes with? Any successes or failures?
