Left-overs
Currently, our main left-overs this Christmas are cream (a lot of whipping cream), maple syrup and soft cheese. With the prospect of our guests imminently leaving (so just two of us left), any ideas for using these up either together of in different dishes?

Would have thought maple syrup will keep for a bit. You can freeze whipped cream.

I think you can, Dandelion though I have only used it as part of the mixture with sieved cottage cheese.
I use lower fat soft cheese as a 'sauce' for pasta dishes. Sometimes need to thin a little with milk, if you're a weightwatcher, cream if you're not.

I use things like Philadelphia and Marscapone for cheesecakes, I don't think it matters if it's low fat.
I think I would attempt a maple syrup cheesecake, I'm sure there are recipes out there.

I've also whipped the cream which was left with a little icing sugar (on the advice of my freezer book) and frozen it to use in desserts - I've never frozen cream before but there's a first time for everything!

Mr D had a slice of maple syrup flapjack in our local Coffee#1 this morning, and said how nice it was. So that's where the maple syrup's going!

Interesting you mentioned the frozen cream, Dandelion. I have bought frozen cream in the distant past, but wouldn't have occurred to me to freeze left-over cream.
Maple syrup flapjack sounds nice. I think I'd add pecans, they seem to go with maple syrup.

Amazing! I have pecans left over from the nut roast I made on Christmas day for our son's girlfriend. This is all coming together nicely...
