almond cookies
Cream 3oz of butter/margarine with 3oz each of white sugar and soft brown sugar until pale and fulffy. Add 1tsp almond essence and one beaten egg, mix well. Stir in 6oz self-raising flour and 2oz flaked almonds. Put heaped spoonfuls of mixture onto greased baking sheets. Cook at 180 C or gas mark 4 for 20 minutes. Leave to cool for a minute then put onto cooling rack. Makes 10 - 20 depending on how large you make them!!
You can vary the recipe with different nuts or fruit, wholemeal SR flour, vanilla instead of of almond essence.

ooh, thanks Dandelion, they sound lovely! Have some flaked almonds on order, so must keep some by to give these a go. Quite fancy trying this with chocolate chunks too.

I made a load of these for the master composter evening we had in Compostwoman's wood last week. The other variation I like is coffee and walnut, where you use a teaspoonful of instant coffee mixed with two teaspoons of hot water instead of the almond essence (and walnuts instead of almonds....)

Alright, we've just made these and I can verify that they are GORGEOUS! Must. try. not. to eat. all of them. at. once.

I recon they would be even more delish as a dessert with ice cream and possibly soft fruit? or toasted chopped nuts?

Especially if hot straight from the oven - still a bit soft with icecream melting a bit on top and toasted nuts/fruit sprinkled on top. Be well nice!
