Ginormous pate de foie gras in the bain marie, 6 duck breasts in the curing chamber with cardamom and star anise, massive pot of duck stock bubbling away and duck risotto on the menu for this evening to use up the rest.

24 chickens plucked, gutted chopped and separated. Meat ready to be minced and carcasses roasting off for stock. Still have a duck and a rabbit to do.
Supper meanwhile will be sausage, eggs, chips and beans. Although they are our sausages from our pigs, our eggs from our hens, our chips from our spuds, and beans... err, from a tin.

Made a cabbage, potatoe and bacon skillet last night. Getting used to the stove at the new place, so didn't really brown off like I'd have liked, but still tasty. Plenty left over to put one supper up into the freezer and one for lunch today.

Just sliced 6 kg of dry cure bacon and it is YUMMEH! So have a macaroni cheese/carbonara combo in the oven. using our own home-smoked cheese, home grown peas, and about, er 6kg of dry cure bacon.
Was going to have the giant duck I plucked yesterday but will have that tomorrow now. Unless we have one of the geese I have in mind to kill tomorrow.

Was hoping I'd be opening another restaurant door tonight (I a supposed to be on holiday) but instead it is rainbow trout (from M&S) sauteed potatoes and green beans, possibly carrots too.
Then more stewed apple, this evening with a pitachio meringue (from Maison Blanc ) and creme anglais - fancy custard!
Can't decide whether just to drink the final glassful of white wine or open another bottle!

Hmm, been quiet in here.
Last night we had Venison stuffed with a whole lobe of foie gras topped with venison liver and bacon pate Wellington made with home-made puff pastry.
oh and veggies.

A slow-roasting a saddle of venison in black coffee with chicory - sounds weird, have never tried it before, will have to see how it goes. Smells divine: roasting coffee mixed with venison, mmm, my stomach is rumbling and my mouth watering. I am a little concerned that the meat may be a bit dry though - there is nothing to lard it.

Simple comfort food here too (although not because it's cold: we've had a glorious sunny day today). Butter bean casserole with dumplings.

yesterday the kids and i made pasta from scratch.
Served it last night with some cooked up bacon, onion, garlic and cream sauce.
Was the best pasta i have ever ever made and all were happy

Chunky Rainbow trout fillets seared with thyme tips, rosemary and sweet chilli couscous, balsamic beetroot, and fresh horseradish yogurt for the grownups and mint yogurt pinkified with beetroot juice for the kids.
Not bad for a thrown together in half an hour special, if I say so myself.

Tonight we had liver and bacon. Haven't had liver for years. I bought a pack of liver for £1.26, which was more than enough for 3 people. I should have stuck with the first pack I picked up, it cost 96p!

Can't remember if I said a few weeks ago that I cut my finger quite badly, right down through the nail with secateurs. It was the night I had a pack of liver for tea, and I still went ahead and cut it up wearing rubber gloves because the plaster kept coming off my finger. I wouldn't recommend it: the liver appeared to have been blessed with far more internal plumbing than is usual and by the time I had finished I had blood everywhere. The liver was good though (cooked in white wine) and as you say JG good value.

Last night we had continental lamb chops.
You seal off some short loin lamb chops. Cook up loads of pasta. Pasta gets added to some tomatoes which i sqeeze a bit into the pasta to let some juice out. Add some herbs.
Sit chops on top of pasta and top off with some onion and cheese of choice.
Cook on medium with the lid on for 1- 1 1/2 hrs. I always make 2 dishes to freeze some. my lovely daughter then eats the left over pasta the next day and my son will munch on the meat lol

Actually liver is very nice. As are kidneys.
I bought my liver from Sainsburys and it was cut up and didn't appear to need much trimming. I left a couple of bits in the tray and no-one complained about what they were eating.
Next time I am going to do a casserole, which was my first inclination yeterday only Delia's recipe said to cook it for 1 1/2 hours. I was worried that if I fried the liver I might over cook it and it would e leathery, but it wasn't. The frying pan was a mess though as I'd coated it in flour. I friend the onions and bacon first and put them in the oven so I could serve the liver as soon as it was cooked. Didn't mash the potatoes though and they would have been nicer mashed.

We had fresh goose blood fried with onions and boiled potatoes. It was scrumptious.
