I was given a brace of skinned and prepped rabbits to play with over the weekend so I decided to take the meat from the saddle off of the back of each plus the meat off of a couple of legs to mince up into bunny burgers. Combined this with about a third as much (in weight) of pork belly plus a fresh finely chopped chilli, breadcrumbs, seasoning and spices into a mincer along with an onion and got a little helper to make them into patties for me. They were universally enjoyed.

The rest of the bunny carcasses went into a stock in a dutch and were slow cooked over a fire until it all fell away from the bone. This meat was added to a creamy, zingy curry sauce and served up with alexanders & almond pilau rice.
