Curry powder
These recipies are from Meg Jump's excellent Cooking with Chillies. I hope she wouldn't mind, it is out of print though you can get it S/H from Amazon if need be.
Always useful to have some pre-prepared spice mixes in the cupboard for when you want to rustle up something quickly. And you can use your home grown chillies, and maybe fennel and coriander if it always bolts to seed for you as it does for me !
To prepare, just grind them up in a coffee grinder. Wise to have one reserved for the purpose !
Meat curry powder
6 tbl coriander seed
2 tbl cumin seed
1 tbl fennel seed
12 black peppercorns
seed from 4 cardomom pods
4 cloves
50mm cinnamon stick
10 dried red chillies or as you see fit
1 tbl turmeric
South African curry powder
I had a friend who's family were Indian via South Africa, who I used to do some sound engineering work with. His mother was an exccellent cook, and this reminds me of her food.
3 tbl coriander seed
2 tbl cumin seed
2 tsp fennel seed
1 tbl fenugreek seed
1 tsp cloves
1 tsp peppercorns
1 tbl cardamom pods
3 tsp chilli powder
3 tbl turmeric
1 tsp ground ginger
