Elderberry wine
I've just racked off my elderberry wine (2nd time) into clean demijohn as there was still loads of sludge in the bottom but I'm not convinced it's going to be ok. It doesn't taste vinegary but not sure it tastes how it should. Is it worth leaving a few more weeks to see how it gets on??
The rhubarb and the elderflower are both fine -3 bottles of each drunk with no ill effects (not all at the same time I hasten to add :drunken: )

Yes always worth leaving. I have had wines which tasted ghastly after a year but great after 3 years.
Even if it does not end up tasting how you want, as long as it is not off and has alcohol it can always be used to blend with other wines for more body.
