Hot V cold
OK, which do you like better, hot smoked or cold smoked meat?
And why?
At the moment I am managing a kind of middle ground. MUCH hotter than cold smoke but doesnt cook the meat so colder than hot smoke.
Am wondering which I should be trying to master

Cold smoked for me.
Both have their place but cold smoked bacon and ham, chorizo etc are absolute favourites for me.
That said, cold smoking and air-drying are probably better suited to a cooler environment than Florida heat.
