Welsh Quick Pickle
Here is one of the recipes from the old Preserving book I got at the car boot sale this week. I'll add some more as I have time.
1 lb finely minced onions
1 lb chopped apple
1/2 lb Demerara sugar
1 pint vinegar
1 saltspoonful cayenne pepper
1 level teaspoonful salt
1 inch piece fresh horseradish
Put the prepared ingredients into the vinegar and boil for 30 - 40 mins, stirring occasionally. Pour into small hot jars and cover closely.
* Vinegar left in bottom of pickle jars is sometimes treated t fresh spices and used for a quick pickle.
*or left-overs of vinegar may be thickened with jam and a shallot lightly boiled and chopped small, or, instead of jam, blackberries (cooked to pulp and sweetened) are mixed with pickle vinegar for a quick relish, ready for use immediately.
