White Chocolate Brownies
5oz white chocolate, broken up.
5oz margarine or butter
8oz light soft brown sugar
3 large eggs
5oz plain white flour
6oz chopped macadamia nuts and dried cranberries (or other fruit and nuts)
Heat oven to mark 4 (180C/350F). Line an 8" square baking tin with parchment or greaseproof paper. Melt the chocolate in a bowl over a pan of boiling water, stirring. Leave to cool slightly. Cream the sugar and fat, gradually add the beaten eggs. Sift in the flour then add the fruit and nuts and melted chocolate. Fold together.
Spread the mixture into the tin and bake in the middle of the oven for 45 minutes, until firm on top but soft inside. Leave to cool in the tin then cut into squares (12 - 16). They keep well for a few days as the chocolate keeps them moist.

Thank you. Have printed off but need to get some dried cranberries before I give it a whirl.
