Fudgey Brownies
Ingredients
1 1/4 cups or 300 mL all purpose organic flour of your choice
1 tsp or 5 mL baking powder
1/2 tsp or 2 mL salt
3/4 cups or 175 mL butter
or
3/4 cups 175 mL margarine
3/4 cups 175 mL cocoa powder
1 cup 250 mL brown sugar, packed
1 cup 250 mL sugar
4 eggs
2 tsp 10 mL vanilla
1 cup 250 mL walnuts, chopped (I like to make it a cup of mixed walnuts, pecans and cranberries)
cooking spray
Fudgey Icing
1/2 tsp 2 mL vanilla
2 cups 500 mL icing sugar, sifted
1/4 cup 50 mL milk
1/4 cup 50 mL cocoa powder
2 Tbsp 30 mL butter
or
2 Tbsp 30 mL margarine
Method
* Blend together flour, baking powder and salt; set aside.
* Melt butter over low heat in a large saucepan. Remove from heat.
* Stir in cocoa.
* Beat in brown sugar, sugar, eggs and vanilla.
* Stir in dry ingredients and walnuts.
* Spray a 9-inch square pan (23 cm) with cooking spray. Spread batter in pan.
* Bake in a 350°F (180°C) oven for 40 minutes. Do not over bake. Cool completely.
* Spread Fudgey Icing (recipe below) over top.
* Melt butter over low heat in a medium saucepan. Remove from heat.
* Stir in cocoa and vanilla.
* Stir in icing sugar and milk until smooth and of spreading consistency.
