Chicken in pepper and mustroom sauce
This recipe is for chicken, but I think it would work just as well with turkey. Amounts are approximate, but for four people it's about:
I green pepper, sliced/chopped
4 - 8 oz mushrooms, sliced
12oz - 1lb cooked chicken/turkey
a little butter or olive oil
1 1/2 tablespoons cornflour
1/2 pint chicken stock (cube/ bouillon powder is fine)
1/4 pint milk

Toss the pepper and mushrooms in the melted butter / heated oil for a few minutes, to cook but not brown. Make a sauce by slaking the cornflour with an equal amount of cold milk, then when it's smooth add the rest of the milk and stock. Heat in another pan, stirring all the time, and simmer for two minutes. Season to taste (I usually put plenty of black pepper in). Now just bung/carefully place the meat and vegetables in a casserole and pour over the sauce. Cover and cook in a moderate over (mk 4/ 180C) for about 30 minutes.
