Diabetic cake and dessert recipes
There are any number of these on t'internet, but I rarely find exactly what I am looking for. With Christmas coming up, and as we are being cooked for by my sister, I have offered to make the desserts. I want at least one of them to be something everyone can enjoy, but completely sugar free and low fat for my diabetic man. I'm also restricted by the fact it will need to be transported as I can't guarantee oven, fridge or freezer space when we arrive.
One of the desserts I've settled on is to be a trifle. I've been experimenting with the trifle sponge today. I've made a fatless sponge, using a standard recipe, but substituted all the sugar with Zylitol. It's the only sweetener I've found that is very similar to sugar. The sponge has worked amazingly well - didn't rise quite as much as I would have liked, but perfectly adequately for a trifle. The fact that I haven't used this cake making technique for over 20 years may also have something to do with it!
The jelly will be made from gelatine plus the liquid from cooked blackberries, with whole strawberries and blueberries to top the sponge. And over all this, I will make a rose-flavoured custard. Haven't decided yet whether to top with whipped cream, but it will be finished with toasted flaked almonds and maybe some curls of dark chocolate (sugar-free).

A few weekends ago I met up with a bunch of people I know from another internet forum (a woodworking one). It was a pretty strange thing to meet face to face people you have been your "friends" for years, but who you have never met ! But I digress. One of the chaps is diabetic too, and was offering around diabetic friendly chocolate brownies. I would not have known that they had no sugar in them ! Now this post would be much more useful if I could remember what he used instead - If you want to know, I can ask him ...

Ok, now I have an answer. The sweetner is stevia, and the other essential ingredient was pure Peruvian chocolate powder "Which incidentally makes SUPERBLY smooth hot chocolate and is a really cheap way of making a pure chocolate treat" - so I am told.
