I can give you my Spanish omelette recipe: our chickens are called Mary and Martha, so i suppose you could also call it a Martha frittatta! The recipe has developed over the years...
I microwave a large baking potato and leave it to cool. It then gets skinned and chopped into cubes when cool enough to handle. In a large frying pan or paella pan, heat some olive oil, then fry some vegetables. (Is frying bad? Better saute them then!) I'm working my way through some of last years shallots, so when I cooked this last I used a handful of them and a chopped pepper or two. If you're not veggie, you could add a handful of chopped bacon, ham or pepperami. You could also add chopped mushrooms. When the onion is transparent, or even going golden, add the chopped potato and turn it over in the oil. Beat your eggs with black pepper (and salt?) - one of my family is lactose intolerant so I add a spoonful of water to the eggs instead of milk. For four of us I used six eggs. Before putting them in the pan, I added a bit of butter to the veg and pushed it around a bit to grease the pan. Add the eggs, stir round a bit, then leave to set. When the bottom is set and it slides about in the pan, put the pan under a hot grill to set and cook the top of the omelette. Serve with crusty hot bread, salad etc - I feel hungry just thinking about it, and I've just eaten!!

A friend has a recipe which she assures me is fantastic but I need to get it from her and try it out first - but she is adamant that bananas and eggs is a lovely savoury dish :scratch: . I'll repoert back in due course.
