ingredients:to make one Gallon of spicy Banana wine.

2kl-Bananas.
1lt-white grape juice.
1kl-sugar.
250g-Banana skins(optional)
1-lemon(juice only no pith)
9-cloves.
2tbls-honey.
half tsp-tannin.
1tsp-GP yeast compound.
METHOD:boil then simmer the Bananas and cloves for ten min,then strain and press the banana pulp to extract all the juice,then dissolve half of the sugar in the hot juice,then boil and simmer the Banana skins for ten min and strain. When both liquids are cool,add to the demijohn with the rest of the ingredients,fit the airlock
and ferment for a week then add the rest of the sugar in syrup form when cool and top up the DJ with water
and fully ferment out.
NOTE:when fermenting stops rack and add finings rack again and add (glycerine to taste,optional) then
leave to mature for at least 12-18 months. [:-)]

I am trying to guess what this will taste like, and I really don' t know. Does it actually taste of banana ? That might sound like a daft question, but I know that some people regard country wine tasting of the fruits from which it is made almost as a defect. Strange thinking to my mind.

you can taste the banana in the back ground,if you use the skins.
it turns out a very nice,H/M Drink wine
