Last night was sausages and veg, not very good for loosing weight but we needed a bit of variety.
Tonight corned beef and veg with white onion sauce (will make low fat version)

Roll out thinly & cut out cakes, I used a 2 1/2 inch cutter & got 18 cakes.

Place on (I use 2 of the baking sheets) or a greased baking tray.

Cook for 1 hour.

Place on rack to cool...

I am just making another batch & I think although I put Marmite to taste, the li'l ol' gremlin has been on my keyboard & slipped in a li'l "b" where it shouldn't be:

Today is our second elsest birthday, he's 15, where did those years go?

His request is Apricot Chicken, we'll have rice and veg with it.
He loves to have a boost choccy bar ice cream cake, but I forgot the ingredients. So I made a choccy cake, topped with choc chips before it baked (two layers), boiled a can of condensed milk to make caramel, which I filled it with (was a little too runny but oh well) and then iced with some Betty Crocker frosting that I had in the pantry and topped with more choc chips.

Fantastic for the diets we're on and Brians diabetes, just as well he doesn't eat chocolate cake really.

Mmm, probably not. Smoked venison is usually just err, venison hot-smoked and sliced. As you would salmon or whatever.

Venison bacon is made by mincing venison together with pork and back fat and a spice cure, allowing to set in a mould then hot smoking and finally slow-cooking before slicing and ultimately frying.

it's pretty warm here today so i think it'll be cold chook and salad for us tonight.
I'm making the assumption that DD will be eating cucumber and carrot and that's about it.

Last night we didn't have meat (mindful of the fact that Countryfile would be on the TV while we were eating, and Adam Henson is ususally discussing foot rot) - I did a Rose Elliot recipe 'Butter bean gratin' which shouldn't have worked looking at the recipe (it included one chopped boiled onion per person) but which was actually delicious. Will make it again.
I know you're not supposed to watch TV while you eat your meals - it comes from years of bringing up a child with ADHD who was only quiet when the TV was on - it was the only way we ever got a quiet meal, and I'm afraid the habit has stuck!

I saw a recipe for a risotto the other day which said, once the rice had cooked off in the vermouth, to add "two handfuls of boiling stock". Shocked

I have been busy in the kitchen all morning, whilst listening to online chemistry lectures.

I made some chicken stock with the chicken carcass, and the following for my vegan friends:
- a dhal with spinach
- a dark root veg soup
- a borlotti beans and celeriac stew
- a potato and kale dry curry

for myself, on top of what didn't fit in the plastic tubs of what I was preparing for them, I made some chicken potato and spinach "thing".

and no, Mr Rhomboid, I did not put chicken stock in the vegan dishes... hihi!
